Gluten-Free High-Protein High-Fibre Cookie
You will need
-110g Butter or Ghee (room temperature)
-150g Krida monk fruit sweetener
(3 TBSP of grounded flaxseed and 4 TBSP of water.
Mix well and keep in the refrigerator for at least 10mins)
-1 tsp Vanilla extract
-1/2 tsp Baking soda
-1/2 tsp sea salt or himalayan pink salt
-2 and 1/4 cup Gluten-free oat flour
-1/4 cup Whole flaxseed
-1/4 cup Pumpkin seed
Preheat the oven to 325°F .
Mix together butter and honey.
Add flaxseed egg and vanilla.
Mix together the soda, salt, and oat flour.
The dough will be slightly sticky.
Add whole flaxseed and pumpkin seed.
Drop the dough onto the prepared cookie sheets.
Make the dough into cookie shape.
Bake for 15mins.
